Leftover Holiday Turkey Chili


Ingredients:

· 1 tablespoon olive oil

· 1 medium onion chopped

· 1 (28 fluid ounce) can fire-roasted diced tomatoes with juices

· 1 (4 fluid ounce) can diced green chilies with juices

· 1 (14 fluid ounce) can black beans drained

· 1 (14 fluid ounce) can white cannellini beans drained

· 1/2 red bell pepper chopped

· 3 cups cooked turkey meat shredded/cut up

· 1/2 cup chicken bone broth

· 2 tablespoons chili powder

· 1 teaspoon smoked paprika

· 1 teaspoon ground cumin

· 1 teaspoon dried oregano seasoning

· 1 teaspoon garlic powder

· Salt & pepper to taste


Instructions:

1. Add the olive oil and onion and red pepper to a soup pot over medium-high heat. Sauté until the onion is lightly browned.

2. Add all the other ingredients to the pot. Increase the heat to high, bring to a boil, reduce the heat and simmer for 15 minutes.

3. Add salt & pepper as needed, dish it up, and top with desired toppings such as cheese, fresh parsley, or sour cream.
